you can use driftwood in freshwater tanks but it floats, you can put something over/on it to keep it under but then you have to worry about whatever you use popping off and smashing into the bottom of your tank and cracking it. (have you ever tried to hold a floaty under water and have it bounce back up on you?)

Yes, you can. You would have to let it set in a container of water large enough to submerge the whole structure for about two weeks to let it release all of the tannins and water-log it.
